“This is a watershed moment in the history of food,” said Uma Valeti, founder of Upside Foods. There’s a whole young industry out there developing meats that are cultivated from cells extracted from animals, usually via a biopsy.
The technology is “self-renewing,” meaning the process does not require slaughtering animals.
